Chicken pulav is an easy and quick one pot meal prepared with chicken, rice and aromatic spices. You can prepare chicken pulav at home when you are seriously craving for a biryani and do not have enough time to follow that elaborate procedure in making biryani.

Chicken pulav is very delicious and make a complete meal. You can use a pressure cooker to prepare this. Using whole spices, coconut milk and jeera rice enhances the flavor of chicken pulav and makes it irresistible.

(1cup=250ml)

Ingredients:

For marinating chicken:

½ kg chicken

2-3 tbsp curd

2 tbsp mint leaves, chopped

2 tbsp coriander leaves, chopped

¼ tsp turmeric powder

1 tsp oil

Salt

For pulav:

1½ cup jeera rice (seeraga samba rice)/basmati rice

1 tsp fennel seeds/saunf

1 bay leaf

1 sticks cinnamon /chakke

3-4 cloves/lavanga

2 cardamoms /elaichi

2-3 Marat moggu

1 star anise

1 strand mace

2 medium onions, sliced

2 tomato, chopped

5-6 green chillies slit

2 tsp ginger garlic paste

1 tbsp dhaniya/coriander powder

1 tsp garam masala powder

1 cup coconut milk

2 tbsp mint leaves, chopped

2 tbsp coriander leaves, chopped

1 tsp lemon juice

Ghee/oil

Salt

Water

Method:

  • Wash chicken several times in water until clear. Drain water completely.
  • In a bowl, take chicken, salt, turmeric, curd, chopped coriander and mint leaves. Mix well adding oil. Keep this aside for 20-30 minutes.
  • Wash jeera /basmati rice and soak it for 15-20 minutes.
  • Heat a pressure cooker. Add ghee or oil or both. Once hot, add bay leaf, cinnamon, cloves, cardamom, star anise, marat moggu, mace and fennel seeds and Fry for few seconds.
  • Add sliced onions and saute well till light brown. Add green chillies and ginger garlic paste. Fry till the raw smell goes.
  • Add chopped tomatoes and cook till soft. Add dhaniya powder and garam masala and Fry.
  • Now add marinated chicken and mix well. Cook for 4-5 minutes stirring in between on a medium flame.
  • Add 1 cup coconut milk and 2 cups water. Add salt to taste and bring it to boil. When it starts to boil, add chopped mint and coriander leaves.
  • Also add lemon juice and one teaspoon ghee. Close the lid and cook on a medium flame for 2 whistle.
  • Once done, remove from the stove and keep aside till the pressure release. Gently fluff the rice and transfer to a serving bowl.

Note:

  • You can prepare chicken pulav without marinating chicken too.
  • Jeera (seeraga samba rice) gives a wonderful aroma and flavor to the pulav. You can use basmati rice too.
  • Chicken pulav is not too spicy. Add spices as per your taste and likings.
  • Instead of coconut milk, you can add grinded coconut paste too.
  • Rice to water ratio used here is 1:2.
  • Cook chicken pulav on a medium flame only.
